Lactation Cookies Recipe
A quick and simple lactation cookie recipe that may help increase milk supply while you are breastfeeding. Remember to drink plenty of water and keep up your calorie intake to assist your body in making the adequate amount of breast milk for your baby’s need.
Ingredients:
250g Butter
1 cup Sugar
1 cup Brown Sugar
2 large Eggs
4 tablespoons Water
2 tablespoons Flaxseed meal (available at health food stores)
1 teaspoon Vanilla Essence
2 cups Flour
1 teaspoon Baking Powder
2 tablespoons (heaped) Brewers Yeast (available at health food stores)
3 cups Oats
1 cup (250g packet) Choc Chips
375 F / 180 C oven
Soak flaxseed meal in water for 3-5 mins
Cream butter and sugar. Add one egg at a time and mix well. Add vanilla and flaxseed mix, beat well. Sift dry flour, brewers yeast and baking powder together and then mix into butter mix. Add oats and choc chips, mix well. Drop spoonfuls onto baking paper on tray. Cook in oven for 8-12 mins (depending on size of cookie).
Notes: If choc chip is too sweet, it can be replaced with dark choc chip or raisins/cranberries.
Recipe makes about 50 cookies.
